You make a really simple chilli oil sauce as the base for your seasonings for the ground beef. The egg noodles take 3 minutes to cook and then you combine everything and top with fresh herbs and veggies. SO good.

Ingredients & Substitutions
Chilli flakes: Any kind of crushed chilli flakes are great for this chilli oil sauce.
Gochugaru fine powder: Gochugaru fine red pepper flakes are a type of Korean chilli flakes. They're smoky and mild. But any kind of fine mild chili powder would do!
Sesame seeds: I've used white sesame seeds, but you can use black too!
Garlic: Freshly sliced garlic is great for this recipe. I wouldn't recommend using garlic granules for this.
Ground beef: Any kind of ground beef is great. I've used 15% fat, but you can use whatever you fancy. If you're looking to make this vegan, you can use a plant-based beef mince alternative. Or you can grate some extra firm tofu and use that instead. Soy sauce: Light soy sauce is great for this one. It's lower in sodium and brighter in colour than dark soy sauce.
Rice wine vinegar: To balance out the flavours, we want to have some kind of acid and rice wine vinegar is perfect for this. You could alternatively use lemons or lime for a different flavour.
Sesame oil: To add a nuttiness to the recipe, sesame oil is a great addition. Peanut oil would also be good.
Peanut butter: To add extra thickness and nuttiness, peanut butter is so delicious. You could also use almond butter.
Sugar: For a bit of sweetness, you want to use some sugar. You could also use agave, honey, or maple syrup.
Egg noodles: I've used fresh egg noodles for this recipe, but you can use any kind of noodles you fancy!
Toppings: I chopped up some cucumber, cilantro, and green onions. You could also serve it with pak choi, tender stem broccoli, or edamame beans.
Step by step instructions with photos
Step 1: Place a frying pan on medium heat. Add in your oil followed by the chilli flakes, sesame seeds, chilli powder, and garlic. Mix thoroughly and then add in your ground beef and stir fry for 5 minutes until turned brown.
Step 2: Meanwhile, make your sauce by combining soy sauce, rice wine vinegar, sesame oil, sugar, and peanut butter. Mix until smooth.
Step 3: Pour in your soy sauce mixture followed by 150ml water. Give everything a good stir and reduce to low. You should have a saucy ground beef spicy situation. Taste and then season with salt and pepper based on your preference. Cook for a further 5 minutes while your noodles cook.
Step 4: Cook your egg noodles to packet instructions in salted boiling water.
Step 5: Once you've drained your noodles, divide them between four bowls and evenly top with your ground beef sauce. Top with sliced cucumber, chopped cilantro, and green onions. Mix thoroughly and enjoy!
Top Tips for Beef Noodles!
- The higher the fat % of your ground beef, the juicer and the tastier the beef will be.
- If you're wanting to make a creamier sauce for the beef noodles, I'd recommend adding some light cream or even some milk into the beef pan until it reaches the consistency you'd like.
- Make sure to salt the water when cooking noodles. This adds so much flavour!
What to do with leftovers
Storage: Place any leftover beef noodles into airtight containers and into the fridge for up to 3 days.
Freezing: Once again, let the dish cool, then store in airtight containers. Place in the freezer for up to 3 months. Leave to thaw overnight in the fridge before reheating. The textures might have changed a bit but it should still taste delicious. Follow the reheating instructions below!
Reheating: Whether you're reheating in the airtight container or in a saucepan, I highly recommend adding a few tablespoons of milk, water, or light cream to loosen up the sauce to help retain it's moisture. Heat until piping hot and enjoy!
