INGREDIENTS FOR AIR FRYER STUFFED SALMON
Salmon Fillet: Salmon, the star of this dish, is rich in omega-3 fatty acids. The fillet's tender, flaky texture makes it a perfect canvas for stuffing. When air-fried, salmon retains its natural oils, resulting in a moist and flavourful dish. For this recipe, I'm stuffing the salmon from the top of the fillet, as I find trying to insert the filling in a horizontal angle just causes lots of leakage. So, you want to try and find salmon fillets that are thick enough to stuff them vertically. If you're only able to find wider fillets of salmon, you might find it easier to stuff them horizontally. If you've got some leftover salmon, then you could use it in my fish tacos with mango salsa as a summery dish option!
Ricotta: Ricotta, a creamy Italian cheese, adds a velvety texture to the stuffing. It's lower in fat and calories compared to many other cheeses, making it a healthier option. Its mild flavour complements the richness of salmon, creating a gorgeous balance in every bite. You could also use cream cheese for a creamier texture, but I find ricotta to be a light taste that works perfectly with the stuffed salmon in air fryer.
Frozen Spinach: I've used frozen spinach for this recipe because it's super quick and convenient. Simply place the spinach in the microwave to defrost, then squeeze out any excess liquid and add it to your filling mixture. Spinach not only provides vibrant colour but also contributes essential nutrients. Packed with vitamins A, C, and K, spinach supports immune function, collagen formation, and bone health. Its high fiber content aids digestion and promotes a feeling of satiety. When wilted down and incorporated into the stuffing, spinach imparts a subtle earthy flavour and a delightful, mildly crunchy texture, enhancing the overall dish.
Harissa Paste: Harissa paste, a North African chilli pepper paste, introduces a bold and smoky element to the stuffing. Its spicy kick contrasts beautifully with the milder ricotta and adds depth to the dish's flavour profile. When carefully incorporated, it elevates the stuffing, creating a perfect fusion of heat and richness. I love to buy Belazu's harissa paste, but feel free to get one from your local international store. Just be careful that different brands have different heat strengths. So, you may need to use more or less depending on the product.
STUFFED SALMON IN AIR FRYER INGREDIENT SUBSTITUTIONS
Salmon Fillet: If you prefer a different type of fish or are catering to dietary preferences, consider substituting the salmon fillet with trout, halibut, or even a meaty white fish like cod. These alternatives offer similar textures and can easily absorb the flavours of the stuffing. Opt for sustainably sourced fish to ensure both the taste and environmental responsibility of your dish. If you'd like to use a different type of meat, then chicken breast is a great alternative. Or, if you want to make this vegetarian, stuffing aubergines, courgettes, or peppers would be a great alternative.
Ricotta: If you don't have ricotta, cream cheese or mascarpone are a great dairy option. For a dairy-free option, swap ricotta with silken tofu blended with nutritional yeast and a touch of lemon juice. This vegan alternative offers a smooth, creamy texture similar to ricotta, and the nutritional yeast adds a subtle cheesy flavor. Cashew cream or blended white beans are also viable substitutes, providing richness and a neutral base for the stuffing. These alternatives maintain the creamy consistency while catering to vegan or lactose-intolerant diets.
Spinach: If spinach isn't your favourite green or if you're looking for a different taste, consider substituting it with Swiss chard or kale. Swiss chard, with its colorful stems and tender leaves, offers a slightly earthy flavor and a hint of sweetness. Kale, robust and hearty, adds a satisfying crunch and a more assertive taste. Both greens are rich in nutrients, including vitamins A, K, and C, ensuring a wholesome stuffing for your salmon.
Harissa Paste: If you don't have access to harissa paste, feel free to use another chilli paste that is available to you like sriracha or any kind of hot sauce. To vary the spice level or explore different flavour profiles, consider substituting harissa paste with a blend of smoked paprika, cayenne pepper, and a touch of ground cumin. This homemade spice mix offers a smoky, mildly spicy flavour without being overly hot. Alternatively, if you prefer a milder option, mix tomato paste with a pinch of chili powder for a subtle kick. Adjust the spice levels according to your preference, ensuring the stuffing aligns perfectly with your taste buds. These substitutions provide versatility while preserving the essence of the dish.
RECIPE VARIATIONS
VEGAN AIR FRYER STUFFED SALMON: For a plant-based twist, embrace a vegan version of Air Fryer Stuffed Salmon. Replace the salmon fillet with large, meaty Portobello mushrooms or thick slices of roasted aubergine/eggplant. The stuffing can consist of a blend of vegan cream cheese, sautéed spinach, garlic, and a dash of lemon juice. Add nutritional yeast for a cheesy flavour and a handful of chopped walnuts for crunch. Season generously with your favourite spices and herbs. Air-fry until the mushrooms are tender or the eggplant slices are crispy, delivering a vegan delight that's rich in flavors and textures, making it a favourite among both vegans and non-vegans alike.
DAIRY FREE STUFFED SALMON IN AIR FRYER: For a dairy-free version, choose dairy-free cream cheese or cashew cream as a substitute for ricotta. These alternatives offer a creamy consistency and contribute a subtle nutty undertone. Sautéed spinach, combined with dairy-free cream cheese, provides a luscious, plant-powered stuffing. Enhance the flavours with a touch of nutritional yeast, lemon zest, and a pinch of smoked paprika for depth. This dairy-free variation ensures a creamy, flavourful stuffing without compromising on richness, catering to individuals with lactose intolerance or those following a dairy-free diet.
MORE MEATY: To create a heartier, meatier version, consider incorporating cooked and crumbled spicy sausage or chorizo into the stuffing mixture. The bold, savoury flavour of the meat pairs exceptionally well with the spinach and harissa paste. Opt for lean turkey sausage or plant-based sausage for a healthier alternative. Mix the cooked sausage with ricotta, sautéed spinach, and a generous dollop of harissa paste for an extra kick. Stuff the salmon fillet with this flavourful, meaty mixture, creating a satisfying dish that's sure to impress meat lovers. The combination of spices and textures in this variation adds a delightful contrast to the tender salmon.
STUFFING VARIATIONS
Crab Meat and Cream Cheese: Elevate your Air Fryer Stuffed Salmon with a filling of crab meat and cream cheese. Mix tender, sweet crab meat with creamy, tangy cream cheese, creating a gorgeous stuffing that exudes seafood elegance. Add a touch of fresh dill and a squeeze of lemon juice to enhance the flavours. The creamy texture of the cheese perfectly balances the delicate sweetness of the crab, resulting in a heavenly seafood-infused dish that's sure to impress seafood enthusiasts.
Feta Cheese and Spinach: Explore the Mediterranean flavours by incorporating feta cheese and spinach into your stuffing. The crumbly texture and tangy taste of feta cheese combine harmoniously with the earthy notes of sautéed spinach. Sprinkle in some toasted pine nuts for added crunch and depth of flavour. The marriage of these ingredients delivers a stuffing that's both savoury and satisfying. The salty richness of the feta melds with the freshness of the spinach, creating a delightful contrast. Each bite offers a burst of Mediterranean essence, making it a perfect choice for those seeking a flavourful and fresh stuffing variation.
Cream Cheese and Artichoke: Infuse your stuffed salmon in air fryer recipe with a creamy and wholesome twist by using a filling of cream cheese and artichoke hearts. Combine softened cream cheese with finely chopped artichoke hearts, garlic, and a hint of lemon zest. The artichoke's tender texture and slightly nutty flavour complement the velvety creaminess of the cheese, resulting in a stuffing that's both rich and refreshing. A pinch of red pepper flakes adds a subtle heat, enhancing the overall flavour profile. This stuffing variation offers a delightful blend of creamy, tangy, and mildly spicy notes, and is absolutely delicious.

WHAT TO DO WITH LEFTOVERS
Storage: To preserve the flavours and textures of your leftover Air Fryer Stuffed Salmon, store it in an airtight container in the fridge. Make sure the salmon is cooled before sealing the container to prevent moisture buildup. Proper storage ensures the dish stays fresh and delicious, allowing you to enjoy it again within the next 3-4 days.
Reheating: When reheating your leftover stuffed salmon, it's essential to do so gently to maintain its moisture and prevent it from drying out. Preheat your air fryer to a low temperature (around 325°F or 160°C). Place the salmon in the air fryer basket and cover it loosely with foil to prevent excessive browning. Reheat for about 5-7 minutes, or until the salmon is heated through. Alternatively, you can reheat the stuffed salmon in a conventional oven at 350°F (175°C) for 10-15 minutes, checking periodically to ensure it doesn't overcook.
Freezing: If you have more leftovers than you can consume within a few days, freezing is an excellent option. Wrap the leftover stuffed salmon tightly in clingfilm and place it in a freezer-safe bag or container. Properly sealed, it can stay in the freezer for up to 2-3 months. To defrost, transfer the frozen salmon to the fridge and let it defrost overnight. When reheating from frozen, follow the same gentle reheating methods mentioned above, ensuring the salmon is heated through without compromising its tenderness and flavour. Proper storage and reheating techniques ensure that your Stuffed Salmon in Air Fryer recipe remains super tasty even after reheating.
