    Eggplant is hands down one of my favorite vegetables to cook with, and I know that's a bold statement, because a lot of people think they hate it. But hear me out! As a cookbook author who's developed recipes from all over the world, I've found that eggplant is one of the most versatile ingredients in my kitchen. It absorbs bold flavors like a sponge, goes silky soft when steamed, crispy and golden when fried, and honestly just transforms depending on how you treat it.

    These are my 17 personal go-to eggplant recipes... the ones I actually make on repeat at home. You'll find sticky Asian-inspired glazes, comforting Indian curries, Korean stews, a crispy Italian sandwich, and even eggplant-stuffed dumplings.     Sticky Ginger Eggplant
    If you aren't the biggest fan of eggplant (yet), this is the recipe that will change your mind. It's honestly one of my favorite quick dinners. Eggplant discs get coated in cornstarch, shallow fried until golden, then tossed in a sticky ginger and soy sauce that caramelizes beautifully. The whole thing takes less than 20 minutes and it's become one of my partner's and my most-requested weeknight meals. I also love it for meal prep because the longer the eggplant sits in the fridge, the more the soy sauce soaks in and makes the flavors pop.

    Sticky Miso Aubergine
    Sticky Miso Eggplant
    If you loved the sticky ginger version above, you need to try this miso glazed eggplant. It's silky, salty, sweet, and comes together in under 20 minutes. What I love about this one is that it's amazing for meal prep. Just store it in the fridge for up to 4 days and the miso and soy flavors actually intensify over time. It's one of those dishes that's almost better as leftovers, which is rare! Serve it with rice, noodles, or honestly just eat it straight from the container like I do.

    This maple tahini eggplant is one of my go-to midweek meals. You only need a handful of ingredients... eggplant discs are fried until golden and then drizzled with a sweet maple and creamy tahini sauce. The combination of the maple sweetness with the nutty tahini is so simple but so good. Like my other sticky eggplant recipes, this one is perfect for meal prep too and the flavors just keep developing.

    These gochujang eggplant skewers are unbelievably good. A 5-ingredient gochujang sauce, which is a bit spicy, a bit peanutty, a bit sweet, gets brushed over eggplant skewers and pan-fried until sticky and caramelized. The whole thing takes less than 20 minutes and they work beautifully served with noodles, rice, or just eaten straight off the skewer.     One thing you won't find in most eggplant roundups is Asian eggplant recipes... which is crazy, because some of the best eggplant dishes in the world come from Chinese, Korean, and Japanese kitchens. When my partner and I traveled through China, we ate eggplant almost every day, and it completely changed how I cook with it. Here are some of my favorite recipes.

    Chinese Steamed Eggplant
    This was one of my favorite dishes when my partner and I traveled through China for 5 weeks. It's full of umami, takes just 15 minutes, and is perfect served with a portion of sticky rice. The steaming method keeps the eggplant incredibly silky and there's no frying needed at all. You could chop it up smaller and toss it with noodles too, or just eat it by itself. If you're looking for something light and flavor-packed, this is the one.

    Korean-Style Chicken Stew with Eggplant
    This Korean-style chicken stew is seasoned with ginger, garlic, gochujang, and kimchi, and it's served on a bed of silky mashed potato. It's one of my favorite cold-weather dinners because it's slightly spicy, super comforting, and the kind of dish that warms you from the inside out.     This is one of the silkiest, most delicious plant-based curries I've ever made. Roasted garlic and pulled roast eggplant combine with creamy chickpeas in a rich tikka masala sauce. It's vegan, gluten-free, and dairy-free, but don't let that fool you... it tastes incredibly indulgent. It takes about 30 minutes, and I use an air fryer to roast the eggplant and garlic until soft and caramelized while the curry gravy comes together in one pan. I love eating it on its own, but it's also great with rice or naan.

    If you're not a fan of really spicy curries, this eggplant moilee is for you.     This harissa rice bowl is like a soup served with rice, chickpeas, and fried eggplant in a harissa honey broth. I love how underrated rice soups are... noodle soups are everywhere, but rice soups deserve so much more attention! This one takes less than 20 minutes and the variety of textures is amazing! It's all made in one pan, which means minimal effort and minimal washing up, but the flavors are honestly out of this world.     This is lasagna without the drama... all made in one pan with minimal washing up. Ground beef simmers in a rich, herby tomato ragu with eggplant for extra texture, then broken lasagne sheets cook right in the sauce. Instead of a classic bรฉchamel, we top the whole thing with a nutmeg-infused mascarpone sauce that honestly rivals the real thing. It's one of my favorite comfort food dinners and the kind of recipe you'll come back to on tired weeknights.

    Easy Eggplant Parmesan Sandwich
    This eggplant parmesan sandwich is one of my favorite lunches to make. Crunchy-outside, juicy-inside eggplant discs with a delicious marinara sauce, melted mozzarella, and fresh basil, all encased in airy focaccia bread. You can use any good crusty bread, ciabatta, an Italian roll, or a baguette all work beautifully. If you love a good sandwich (and who doesn't?), you've got to try this. It's also great with my crunchy chicken romesco sandwich if you want to make it a sandwich night!!

    Vegan Prawn Toast Recipe
    Vegan "Prawn" Toast (Made with Eggplant!)
    This might be my most creative eggplant recipe. When you roast eggplant, it takes on a gooey, slightly slimy texture, which sounds unappealing, but it's actually perfect for mimicking the texture of mashed prawns used in traditional prawn toast. Add in soy sauce, garlic, sugar, and nori sheets for that oceany, savory flavor, and you've got a vegan prawn toast that genuinely fools people. Nobody ever guesses it's eggplant! It's a total crowd-pleaser and one of the most fun dishes I've developed.

    Chipotle Pork & Eggplant Dumplings
    As a cookbook author (my book is called The World Is Your Dumpling) I'm always experimenting with new dumpling fillings. These open-ended chipotle pork and eggplant dumplings are served on a bed of chipotle tomato stew and topped with a guacamole-style dip.     My Tips for Cooking Eggplant

    After developing dozens of eggplant recipes, here are the things I've learned that make the biggest difference:

    Should you salt eggplant before cooking? It depends on the recipe! For frying or roasting where you want less moisture, salting for 20-30 minutes helps draw out excess water and any bitterness. But for steamed or stewed eggplant dishes, like my Chinese steamed eggplant or eggplant moilee, you can skip salting entirely because the cooking method takes care of the texture.

    Cornstarch is your secret weapon for crispy eggplant. If you want golden, crispy edges (like in my sticky ginger eggplant), toss your eggplant discs in cornstarch before frying. It creates a light, crunchy coating that holds onto sticky sauces beautifully.

    Eggplant is one of the best vegetables for meal prep. I know I keep saying this, but it's genuinely true! My sticky ginger eggplant, miso eggplant, and gochujang skewers all taste better after 2-4 days in the fridge. The sauces soak deeper into the eggplant over time. I make a batch on Sunday and eat it all week.

    Don't be afraid of bold sauces. Eggplant absorbs flavors like a sponge, which is a strength, not a weakness. It's why eggplant works so well with punchy ingredients like gochujang, miso, soy sauce, tahini, and harissa. The bolder the sauce, the better the eggplant.

    Different varieties for different dishes. Globe eggplant (the big round one you see everywhere in the US) is great for frying, roasting, and making eggplant parm. Chinese or Japanese eggplant (longer and thinner) is better for steaming and stir-fries because it has fewer seeds and a more delicate texture.
