And this air fryer chicken gyros is exactly that. Whenever I cook it, I have warm memories of traveling around Greece, and it fills me with comfort. I hope it has that same effect on you.

Ingredients
Flatbread: I bought a huge garlic and herb flatbread from the store, but you could make smaller portions for more than one person and assemble it that way.
Fresh veggies: For the gyros, you'll need a large tomato, red onion, and a bunch of parsley to scatter into the flatbread along with all your other ingredients.
Chicken marinade: For the chicken marinade, you'll need chicken thighs (skinless and boneless), garlic, mixed herbs, salt, black pepper, lemon, and olive oil. It's so fresh and so juicy. The longer you marinade the chicken for (up to 24 hours), the tastier the meat will be. You could also do this with pork or tofu.
Chips/French Fries: For the French fries, you'll need potatoes, olive oil, salt, and pepper. They become soft on the inside and crispy on the outside. So perfect.
Tzatziki: The absolute classic Greek sauce. Everyone has their own recipe, but for mine, you'll need Greek yoghurt, cucumber, garlic, lemon, salt, and black pepper. Simple, but delicious.
Step by Step Instructions
Step 1: Marinate your chicken thighs in your "chicken marinade" ingredients. Set aside for minimum 20 minutes (max up to 24 hours in the fridge). Meanwhile, slice up your potatoes into 1cm thick wedges and toss in your olive oil, salt, and pepper.
Step 2: Pour the chips into one of the compartments in your Ninja Foodi Air Fryer. Transfer the chicken pieces onto your two skewers and place into the other Ninja Foodi Air Fryer compartment. Set the air fryer at 200C/390F for 16 minutes and press MATCH so both the chicken and the chips finish cooking at the same time. Make sure to turn them over halfway through. You'll end up with crispy chicken and beautifully cooked homemade chips.
Step 3: Gently slice the chicken off the skewers to give you small chunky pieces of chicken, ready to assemble for your gyros.
Step 4: Meanwhile, put together all of your tzatziki ingredients in a bowl. Make sure to squeeze the cucumber to drain out any excess water! Chop up and prep your red onion, tomato, and parsley.
Step 5: Heat up or lightly toast your flatbread, and then layer it with tzatziki, chicken, French fries, tomatoes, red onion, parsley, and more tzatziki. Roll up your gyros (I used some baking paper to help hold it all in place) and then serve up and enjoy!
What to do with leftovers
Storage: If you've got leftover gyros, I'd highly recommend storing each component in a separate Tupperware to avoid the gyros going soggy. Store in the fridge for up to 3 days. Assemble when you're ready to eat.
Re-heating: I'd personally reheat the French fries and the chicken in the air fryer for 5 minutes at 200C/390F. Then assemble your gyros as suggested in the recipe card below.
FAQs
Absolutely! You can use pork which a great meat protein. Or if you're looking for a veggie alternative, marinate cubes of firm tofu in the mixture suggested, and air fry the tofu for 10 minutes until crispy on the outside and soft on the inside.
For sure! I've used a large flatbread for this recipe to make one large gyros, but you can make two portions using smaller flatbreads, and then also double the recipe quantities to make it for four people.
You can freeze tzatziki, but when defrosting, the consistency and texture will change. So I'd recommend making it fresh.

- 1 large flatbread (I bought a huge garlic and herb flatbread from Tesco) or two medium-sized flatbreads
- 1 tomato, cut into 6 wedges
- ½ red onion, sliced
- Small bunch of parsley, roughly chopped
Chicken Marinade
- 2 chicken thighs (skinless and boneless), sliced into chunks
- 1 teaspoon garlic, minced
- ½ tablespoon mixed herbs
- 1 teaspoon salt
- 1 teaspoon black pepper
- ½ lemon, juiced
- 1 tablespoon olive oil
