There's nothing better than a gorgeous breakfast burger, and this Scrambled Egg Burger with a sausage patty, melted cheese, and caramelised onions in a toasted brioche bun is SO good. Inspired by the McDonald Scrambled Egg Breakfast Burger, this is irresistibly tasty.
Burgers in general, are seen as a lunch or dinner meal. This needs to stop (in my personal opinion), because this scrambled egg burger is ideal for breakfast and is such a treat. It takes no longer than 20 minutes to make and is so delicious. Enjoy!

INGREDIENTS
- Brioche Bun - Soft, buttery, and slightly sweet, this bun adds a touch of luxury to your breakfast. I love to lightly toast mine either in the toaster or just in the pan used to fry the red onions.
- Ketchup - The classic condiment that adds a tangy and sweet element to your burger.
- Mayonnaise - Creamy and rich, mayo brings a gorgeous balance to the tangy ketchup.
- Sausages - Choose your favourite sausages for a juicy and flavourful patty. I've used Cumberland sausages for this recipe. Make sure to squeeze the sausage meat out of the patty and then combine it with your chilli flakes for an extra boost of flavour. The higher the fat percentage of the sausage, the juicier your patty will be. So, if you want a healthier version, then look for the leanest meat (healthy version of this burger recipe is below under variations!).
- Chilli Flakes - For a hint of heat that complements the richness of the sausage.
- Eggs - The heart of your scrambled egg layer, contributing protein and a velvety texture. I used 3 eggs for this recipe and whisked them up in a bowl before pouring them into the buttery pan.
- Butter - Adds richness and flavour to your scrambled eggs.
- Spring Onions - Fresh and vibrant, spring onions provide a subtle crunch and mild onion flavour for your scrambled eggs.
- Burger Cheese - Opt for your preferred cheese variety to achieve that perfect melt. I've used classic "plastic cheese" but a good cheddar slice would be fabulous. For an extra melty touch, you can blow torch the cheese, or place it under the grill for a minute, but that's totally optional and may just cause a bit of unnecessary steps.
- Red Onions - Sliced red onions with a touch of balsamic vinegar bring a sweet and tangy punch.
- Balsamic Vinegar - Adds depth and a touch of sweetness to your caramelised onions and is the perfect touch to your egg burger.
SUBSTITUTIONS
The beauty of this Scrambled Egg Burger recipe lies in its versatility. Don't hesitate to make these ingredient substitutions to suit your taste preferences or dietary needs:
- Brioche Bun: While brioche buns offer a luxurious touch, you can swap them for whole wheat buns, ciabatta rolls, or even lettuce wraps for a low-carb option.
- Ketchup and Mayonnaise: Customise your burger's condiments by using your preferred sauces, such as mustard, barbecue sauce, or sriracha mayo.
- Sausages: Opt for your choice of sausages, whether pork, chicken, turkey, or even plant-based sausages for a vegetarian twist.
- Chilli Flakes: Adjust the level of spiciness by adding more or less chilli flakes, or substitute with your favorite hot sauce.
- Eggs: If you're looking for a vegan option, consider using scrambled tofu or chickpea flour scramble instead of eggs.
- Butter: Swap butter for olive oil or a dairy-free alternative to achieve a similar richness in your scrambled eggs.
- Spring Onions: If you're not a fan of spring onions, substitute with chopped chives, red onions, or bell peppers for added flavour and colour.
- Burger Cheese: Choose from a variety of cheeses like cheddar, gouda, Swiss, or dairy-free alternatives to cater to your taste.
- Red Onions and Balsamic: Replace balsamic caramelised red onions with caramelised onions cooked in apple cider vinegar or your preferred cooking wine. Or if you don't like onions but want an extra layer on your burger, you could add on a layer of crispy bacon, tomato, or avocado.
Feel free to get creative with your substitutions and make this scrambled eggs burger truly your own. Whether you're adjusting for dietary restrictions or simply experimenting with flavours, the possibilities are endless!
VARIATIONS
I love "souped up" recipes, and this egg burger is such an easy recipe to change and adapt to suit whatever mood you're in. From gourmet twists to healthier alternatives, there's a version for every palate:
- Gourmet: Elevate your burger by adding a layer of sautéed mushrooms and Swiss cheese. The earthy flavor of mushrooms complements the richness of the sausage and eggs, while the Swiss cheese adds a nutty and melty dimension.
- Mexican-Style: Give your burger a Mexican feel by incorporating sliced avocado, salsa, and a sprinkle of crumbled queso fresco. This variation adds a refreshing and zesty kick to your breakfast burger.
- Vegetarian: For a lighter and plant-packed option, replace the sausage patty with a hearty portobello mushroom or a grilled slice of halloumi cheese. Load up on fresh spinach, roasted red peppers, and a dollop of hummus for a nutritious and satisfying start to your day.
- Healthy: If you fancy a health-conscious version of this scrambled egg burger, I'd recommend going for lean turkey or chicken sausages (with a lower fat percentage of around 5), use a whole wheat bun, and replace traditional cheese with a slice of creamy avocado. Swap butter with a drizzle of olive oil for scrambled eggs and choose a low-sodium cheese variety if you want to add that on top.
- Vegan: If you're looking for a plant-based option, then swap the sausage patty for a blend of crumbled tofu seasoned with turmeric, nutritional yeast, and black salt for that eggy flavour. Top it with caramelized red onions, vegan cheese, and fresh spinach. This variation showcases the versatility of plant-based ingredients without compromising on taste. You could always buy a plant-based burger patty if you'd like that extra texture!
So, depending on your preferences or dietary requirements, this scrambled egg burger has so many variations that make it a perfect breakfast for anyone and everyone!
HOW TO MAKE SCRAMBLED EGG BURGER: STEP BY STEP

STEP 4: ASSEMBLE THE EGG BURGER
- Lightly toast the brioche buns. Start assembling with the bottom bun, followed by a layer of mayo and ketchup. Add the sausage patty, a spoonful of scrambled eggs shaped using a ½ cup measuring cup, cheese, and caramelised red onions. Top with the remaining bun. Serve up and enjoy!
SCRAMBLED EGGS BURGER LEFTOVERS
I'm going to be totally honest, these egg burgers aren't the best for leftovers, because they go soggy and fall apart. So, here are a few ways you can use up the leftovers (if there are any) and repurpose this recipe into something different so there's no waste!
- Breakfast Burrito: Wrap your leftover sausage patty, scrambled eggs, and any additional toppings in a tortilla. Add a drizzle of hot sauce, roll it up, and enjoy a portable morning snack.
- Scrambled Egg: Combine your leftover sausage patty, scrambled eggs, and veggies in a pan. Sauté them together for a flavourful breakfast scramble. Top it with grated cheese and serve with a slice of toast.
- Loaded Breakfast Bowl: Create a nourishing breakfast bowl by layering your leftover sausage patty and scrambled eggs over a bed of cooked quinoa or brown rice. Add sautéed spinach, diced avocado, and a dollop of salsa for a colourful start to your day.
- Brunch Pizza: Turn your leftovers into a breakfast-inspired pizza. Use a whole wheat tortilla or pita bread as the crust. Spread a thin layer of tomato sauce, top with scrambled eggs, sausage, and cheese. Bake until the cheese melts and enjoy!
