This delicious and super quick Green Tahini Miso Ramen is one of my favourite dishes to make when I only have a few minutes to make dinner! It takes less than 10 minutes and is creamy, fresh, and tasty. It also happens to be vegan, I think you're going to love it!
Tahini miso sauce is lovely, but why not make it better by making it extra fresh and green?! I've used coriander and spring onions (scallions) to add the colour but oh does it add a wonderful freshness to the dish too, so delicious!

- It's quick - this recipe comes together in no time! It's perfect for a busy weeknight dinner as you can make it in less than 10 minutes.
- It's versatile - although I've kept this miso tahini sauce super simple, you can easily add anything you fancy like vegetables, meats, or any other protein!
- It's super fresh! "Ramen" and "fresh" don't tend to go hand in hand, however, because of the coriander and the spring onions in our tahini miso dressing, this noodle dish is so refreshing, perfect for summer!
INGREDIENTS
- Tahini - a wonderful sesame paste used in a variety of cuisines. My top tip about tahini is that the better quality tahini you buy, the better tasting this dish will be (this might sound obvious but it makes a big difference). Tahini shouldn't be bitter, you should be able to eat a spoonful of it without finding it unpleasant. I'd recommend going to your local international supermarket and asking the owner which tahini they'd recommend. Otherwise, here are a couple I love using; Belazu Authentic Tahini and Al'fez Tahini that you can get online or from a larger supermarket.
- Lemon - the citrus balances out the flavours of the sauce.
- Olive oil - this emulsifies the sauce adding thickness and viscosity!
- Sugar - for a bit of sweetness you can add sugar, maple syrup, or honey!
- Miso paste - Miso is a traditional Japanese thick paste produced by fermenting soybeans with a handful of other ingredients. It's salty, full of umami, and a bit sweet. I've used Itsu Miso Paste sachets which is a white miso paste. Feel free to go to your local Asian supermarket and check them out there. I'd go for a white miso paste over a red miso paste, as it's sweeter and more rounded.
- Garlic - I've used a clove of raw garlic, but if you find raw garlic to be too intense, feel free to use ½ teaspoon of garlic granules instead.
- Coriander - for freshness and green! Use fresh coriander/cilantro leaves.
- Spring onion - I've used the green parts of the scallion for this recipe as it provides the most colour. Don't throw away the white parts, just wrap them up and place them in the fridge.
- Water - you'll need around 50-100ml of water just to loosen up the sauce.
- Ramen noodles - I've used Shin Ramyun noodle packet for this recipe. You could use any ramen noodles you can find though!
HOW TO MAKE GREEN TAHINI MISO RAMEN NOODLES - STEP BY STEP
STEP 1 - MAKE YOUR GREEN TAHINI MISO SAUCE
- To a blender, add in your tahini, lemon juice, olive oil, sugar, miso paste, garlic, coriander, spring onions and water. Blend until the sauce is smooth and green.
- Taste the sauce and see if you would like to make it more salty (add more miso), more sweet (add more sugar), thicker (add more spring onions or coriander), or more liquid (add more water).
- Set your sauce aside while you boil your noodles.
STEP 2- BOIL YOUR RAMEN NOODLES
- Get your packet of ramen noodles - I'm using Shin Ramyum, but you can use either a packet of instant noodles, dry noodles or fresh noodles - and cook them to package instructions using the seasonings.
- Drain your noodles and then in that same pan, pour back in your noodles and sauce. Stir everything until all the noodles are coated in your green tahini miso sauce and then serve up with toppings of your choice and enjoy!
VARIATIONS & SUBSTITUTIONS
- No coriander - if you taste soap when you eat coriander, then sub out the cilantro for some parsley. Or, you can just stick with the spring onion.
- Sesame paste instead of tahini - if you can't find any tahini near you, but you have access to sesame paste, then you can use that! It will be more intense in flavour, so you might want to use a bit less.
- Miso substitute - the best ingredient to substitute for miso paste if you're unable to find it is marmite or soy sauce. Both are very salty and therefore balance out the sauce well.
- Different carb - noodles aren't everyone's cup of tea or you might just not have them in the house. So, my recommendation is for you to serve this as a salad dressing, with cooked pasta, or with some kind of grain (couscous, pearl barley).
- Add more elements - if you'd like to add more to this dish, I'd recommend frying some chicken or beef and adding it to the dish. If you'd like to add more vegetables, fried aubergines, tender stem broccoli, or Chinese cabbage would work really well for this dish. You could also add an egg on top for extra protein.

A match made in heaven. Okay, in all seriousness, it's creamy, nutty, full of umami, slightly sweet, quite salty, and delicious.

Green Tahini Miso Ramen
Ingredients

- Bunch of coriander leaves
- 2 spring onions, chopped green parts

- 2 packets of noodles I used Shin Ramyun noodle packets. If you want to use regular supermarket noodles, use 150g dry or 400g fresh.
