    What is Ramen?

    Ramen is a Japanese noodle soup that traditionally consists of wheat noodles served in a savory broth, topped with a variety of ingredients like sliced pork, soft-boiled eggs, nori, and scallions. The broth is really the heart of a great bowl of ramen and it can take anywhere from a few hours to a full day to develop the deep, layered flavor that makes restaurant ramen so special. As a published cookbook author (my book is literally called The World Is Your Dumpling), combining two of my biggest obsessions, ramen and dumplings, into one dish felt inevitable.     How to Make Ramen Noodles Taste Better

    Even if you're starting with a basic packet of instant ramen, there are so many ways to level it up. Here are my top tips from years of testing:

    Ditch the seasoning packet and build your own quick broth with chicken stock, soy sauce, sesame oil, and a pinch of sugar. The flavor difference is enormous.

    Add a splash of milk or cream right at the end of cooking — this is my secret trick for making any ramen feel more luxurious. It works especially well with spicy noodles.

    Don't overcook the noodles. I always cook mine about a minute less than the packet says, because they'll continue cooking in the hot broth once you serve them.

    What are the best noodles to use for ramen?

    I usually reach for instant ramen noodles (like Shin Ramyun or Maruchan — just ditch the seasoning packet!) for quick weeknight dinners. For something with more bite, fresh ramen noodles from your local Asian grocery store are incredible. Udon and soba noodles work beautifully too, and rice noodles are a great option if you're gluten-free.

    Can you make ramen noodle recipes ahead of time?

    You can absolutely make the broth ahead of time and store it in the fridge for up to 3 days. I'd recommend cooking the noodles fresh when you're ready to eat, as they tend to absorb the broth and go soft if stored together. For meal prep, keep the broth, noodles, and toppings in separate containers and assemble when you're ready.

    What protein goes best with ramen?

    Honestly, almost anything! I use chicken breast in most of my ramen recipes because it's quick to cook, but shrimp, braised beef, spam, sliced pork belly, and tofu all work brilliantly.
